In this doctoral dissertation we optimized conventional and ultrasonic extraction techniques with the aim of obtaining biologically active phenolic compounds in all grapevine parts and grape by-products of two varieties Vranac and Merlo. Phenolic content of the obtained extracts were subjected to UV-Vis and HPLC analyzes. The significant antioxidant and antimicrobial activity was confirmed. The bio-oil extraction from seeds and pomace was performed with the aim to use the biactive waste parts that are generated after processing of grapes. The composition of the bio-oils was determined by GC-MS analysis. Further, it was carried out full conversion (100%) of bio-oil into biodiesel, which was confirmed by 1Н NMR method. Based on the obtained results we can conclude that all grapevine parts can find broad application in the food industry and also in pharmaceutical and energetic field.
